Mango breakfast chia pudding

Add this too your food prep repertoire for a super delicious, fibre and antioxidant rich breakfast  you can prepare ahead of time to save yourself the mental pressure of trying to decide what to eat for breakfast in the mornings! Chia seeds are a rich source of fibre, alpha linolenic acid (ALA) (plant source omega 3 fatty acid) that reduces inflammation and supports a healthy microbiome.

You will need:

  • ¼ x cup chia seeds 

  • 1 x cup plant based milk 

  • 1 x tsp vanilla 

  • 2 x mangos 

  • 1 x handful of macadamias roughly chopped 

  • ¼ x cup coconut chips 

  • 2 x tbsp. greek yoghurt 

  • 1 x passionfruit 

  • Drizzle of honey

Method 

1.     In a bowl, add the chia seeds, milk and vanilla, and stir every few minutes, until all the liquid is absorbed and the chia seeds have fully swelled. 

2.     In the meantime, remove the cheeks of 2 mangos, and slice into chunks and remove from skin. 

3.     In a bowl, over medium heat add the coconut and macadamias and toast lightly. 

4.     In a bowl, once chia seeds have absorbed all the liquid, fill the base of 2 bowls. 

5.     Top the chia seeds with mango, yoghurt, passionfruit, toasted macadamia nuts, and drizzle with honey!
