Lemon "throw together" fibre rich bliss balls

I have made a similar coconut and lemon bliss ball, however this one is more fibre enriched! Its super simple, takes minimal time and is also a nut free option for kids lunch boxes!

I honestly cannot get enough of lemon bliss balls! there isn’t much better then the combination of sweet and sour in my opinion!

 Ingredients:

  • 1 x cup dried dates (soaked) 

  • 1 x cup coconut 

  • ½ x cup almonds 

  • ½ x cup hemp 

  • 1 + ¼  x cup oats 

  • 5 x tbsp two islands unflavoured collagen 

  • 2 x tbsp chia seeds 

  • Zest + juice of 2 lemons

Method:

  1. In a seperate bowl, add the dates and cover with boiling water and allow to soak for 5-10 minutes.

  2. In a food processor or blender, add remaining ingredients to a blender and pulverise.

  3. Once the dates are soaked, drain the water and add to the blender and blend until completely combined.

  4. Spoon mixture and roll into bite size bliss balls and drizzle some melted white chocolate on the top!

  5. Store in the fridge for up to 7 days.

Nutritional Information:

  • Dates, oats, chia seeds and almonds are a great source of fibre! In Australia the recommended daily intakes are around 25-30g and most Australians only get around 16g per day.

  • Both soluble and insoluble fibre is abundant in this recipe which supports a healthy microbiome, intestinal lining, singling satiety keeping you fuller for longer and may assist in the reduction of cholesterol.

  • Soluble fibre is viscous in appearance (think psyllium husk, slippery elm, chia seeds) and is the fermentable portion by our colonic bacteria = healthy microbiome.

  • cholesterol reduction is by an interesting mechanism, as cholesterol is required to produce bile, and bile is required for digestion, therefore cholesterol is pulled from the blood to make more bile, which can be enhanced with the consumption of soluble fibre. Win win situation I say!
